Ingredients
2 pre-baked 20 cm thin Pizza crust
1 jar 250g tomato paste
300g fresh Tiger prawns, marinated with lemongrass, garlic, pinch salt, pepper & soy sauce and pre-cooked
1/4 red onion, thinly sliced
1 lemon, cut into thin slices, then caramelised in balsamic, sugar and butter
1 lime, cut into thin slice, then caramelised in balsamic, sugar and butter
1 red and yellow capsicum, put the whole capsicum in the oven to roast, after cut in half to remove seeds and then cut into 2 cm strips
pinch of cracked black pepper
50g parmesan cheese
1 tsp Lainey’s Chilli Oil
1/2 bunch basil leaves
Method
Preheat oven to 200C
Place pizza crust on a baking tray, and spread 1 tablespoon tomato paste
Top with prawns, red and yellow capsicum, caramelised lemon and lime slices, pepper, Lainey's chilli oil and then parmesan cheese
Bake for 20 minutes or until cheese is melted and the edges are lightly crusted
Cut into slices, garnish with a few basil leaves
