Ingredients
500g skinless chicken breast, cut into 2 cm strips
2 tsp finely minced lemongrass
2 tbsp canola oil
1/4 tsp ground black pepper
1/2 tsp salt
½ tsp brown sugar
3 tsp soy sauce
1 1/2 tsp sesame oil
2 tsp minced garlic
1 1/2 tsp Lainey's chilli oil
Method
Trim and cut chicken into strips, 3cm thick
In a medium bowl, add lemongrass, garlic, pepper, salt, sugar, soy sauce, oil and Lainey's chilli oil in a bowl. Mix in well until salt and sugar dissolved
Then add chicken strips.
Massage the mixture into the chicken flesh, really well. Set aside for 10 minutes or refrigerate overnight
Preheat griller on medium heat, brush some oil on grate
Lay chicken strips on the grill until chicken no longer pink in the centre
Serve with a summer salad, add extra Lainey's chilli oil for additional heat, if you like more heat
